I had lunch with my manager the other day. Yes, I still call her “my manager” even though I haven’t worked for her in over a year. I guess I can just call her my friend now!
She brought a little bag of fresh pattypan squash with her! She knows food is my life. We talked about how she had cooked hers, and roped me in with her “roasted and stuffed” version.
That night, I came home and made these babies. I didn’t really follow a recipe – eeek. I just thought of all the things I like, and made a meatloaf-ish mixture. I figure it’d turn out okay, since I am sort of a meatloaf master. It actually turned out soooo good, although hind sight I wish I would have added cream cheese. But that’s just me. I’d add cream cheese to cheerios.
- 2 pattypan squash (makes 4 halves)
- 1/2 lb of regular sausage
- 1/4 cup diced onion
- 1/2 cup diced onion
- 1/2 cup diced celery
- 1/2 cup panko style breadcrumbs
- 1/4 cup parmesan
- 1 egg
- 1 tablespoon chopped rosemary
- I would add a couple dollops of cream cheese if I made them over
Wash the squash, cut ’em in half, and brush with olive, then roast at 400 degrees for about 25 mins.
Throw the rest of the ingredients into a big bowl and mash up / mix well. You’re done. Isn’t that nice?
Stuff the mixture into the pattypans, and bake at 375 for about 25 minutes.
Pretty simple fall/winter meal if you ask me!!
