It’s been nearly two months since my last blog post. My once a week goal is REALLY working out.
I have several “drafts” in the works that are almost done (even non food related ones!) so not to worry. I hope to have them posted before December….2032.
Anyhoooow, I have to post this one now because it’s easy, it’s cute, it’s perfect for fall…and the pumpkin thing would just be weird on New Year’s Eve. So, before this becomes yet another draft, let’s get to it.
I saw these bell-o-lanterns on Pinterest, and had to make them. That’s pretty much it, ha. I’ve done stuffed bell peppers before, but the cute Halloween twist is what prompted me to make them. This taco version may be my new favorite (and the easiest).
What you’ll need:
Ground beef and beans are the basics, but I love that you can add or omit whatever you like or don’t like. Use ground turkey! Add rice or jalapenos! Get creative. After I baked them, I wished I would’ve added the sour cream (or cream cheese) into the mixture, not just as a topping. Live ‘n learn, peeps…live ‘n learn.
Here is what went into ours, a.k.a. what the kid and man friend would eat
Pretty easy peasy, really. Wash the peppers, cut off the tops and remove the membranes/seeds. Cut the pumpkin face out with a sharp knife before baking.
I browned the beef, drained the fat, then added the taco seasoning (cooking per package instructions). If you dont have time to cook beef, you can always use a can of chilli beans #winning
Throw all the other junk in a bowl with the beef, mix together, and stuff the peppers (topped with grated cheese). Simple!
Bake on a foil lined baking sheet at 375 degrees for about 25-30 mins. Super cute and really tasty!! Happy Halloween!
